The "High-End Forum on Intelligent Manufacturing of Industrial Enzymes" was held in Tai'an, Shandong Province on August 27-28, 2022. Professor Lu-Jia Zhang was invited to attend the conference and delivered a presentation titled "Functional Processing of Protein Foods via Targeted Precise Enzymolysis of Specific Bioactive Peptides." In his report, he introduced his research team's systematic investigations from two perspectives: "bioactive peptide-target interactions" and "enzyme-peptide specificity." The study demonstrated that targeted enzymatic hydrolysis for functional modification of protein-based foods can significantly enhance the functional properties of food proteins, exhibiting substantial application potential.
