Congratulations to Dr. Chuanxi Zhang for publishing a journal paper titled "Umami polypeptide detection system targeting the human T1R1 receptor and its taste-presenting mechanism" in Biomateries, an international journal in JCR Zone 1. In this paper, we developed a new Xian detection system that accurately targets the human T1R1 receptor by combining experiments and simulations, proposes a new design direction of umami polypeptides that balances the hydrophobicity and umami intensity of umami polypeptides, and realizes the quantitative evaluation of the umami mechanism of monosodium glutamate and umami peptides for the first time.
